The Dessert You'll Be Eating All Summer: Healthy(-ish) Peanut Butter Fudge Bars


I’m a chocoholic. Always have been, always will be. Dessert is never optional in my house because #balance


I am not into all those “healthy swaps” for dessert either - I want the real thing.


I like this recipe because it tastes really good (I actually think the dates make it taste even better than if it was just chocolate), it’s easy to make, doesn’t contain random ingredients that I’ve never heard of, is healthy-ish (heavy on the -ish 😂) and best of all doesn’t require me to turn on the oven!


Here’s the rough recipe...you know by now I don’t really measure so just get close enough & you’ll be fine...

  • Blend ~ 5oz (half a bag) of melted Ghirardelli 60% cacao bittersweet chocolate chips, ~3/4 cup almond butter, ~1 cup dates and a sprinkle of sea salt in the food processor.

  • Spread mixture on lined glass baking dish and stick in the freezer for at least 20 mins.

  • Once firm, spread peanut butter on top and you’re done!


Keep these in the fridge until you’re ready to eat...or dig in, I won’t tell! 😋
